Alice Holland, of the Rose and Crown pub, in Northiam Road, Beckley, had ignored environmental health officer’s advice on rodent prevention and food hygiene after an inspection.

Rother District Council officials discovered evidence of rodent ‘runs’ in the bar, kitchen and store rooms and a poor standard of cleaning in the kitchen. They raised concerns about rats and mice being able to gain easy access due to large gaps in the outside doors.

Holland was prosecuted after she failed to act on instructions given by the Council and she pleaded guilty to food hygiene offences in front of Hastings magistrates last month.

Due to an early guilty plea relating to three environmental health offences her fines were reduced by a third. She was fined £700 for each offence.

As well as a fine, she was also ordered to pay the council’s full costs.

Richard Parker-Harding, Rother District Council’s head of environmental health, said: “The prosecution was only taken after repeated attempts to informally resolve the problems at the public house failed and officer’s advice on simple and inexpensive solutions was ignored.”
