A close friend, who just happens to be an Environmental Health Practitioner (EHP), recently found himself in an off duty food safety dilemma.

This EHP (lets call him M) just began trading at his local Sunday Market. After getting up early and setting up the stall with his wife he thought they deserved a good old burger breakfast from the nearby burger van.
M approached the burger van and ordered two burgers with cheese. He then observed the server take two pre-cooked burgers and place them on the hot plate. While these burgers were cooking, the server walked to the fridge, took out a pack of raw bacon and placed them on the hot plate with her bare hands. The server then walked to the back of the van wiped her hands in a dry cloth and approached the burger buns on which she planned to place the now cooked burgers.
As this was M’s first day trading at the market, he didn’t want to make any waves. M motioned the server away from the waiting customers for a quick word. He quietly and discreetly explained to the server that she had handled raw bacon, wiped her hands in a dry cloth and was about to handle bread without washing her hands. The server responded “sorry, I’ll wash my hands”.
M thought to himself, this clearly appears to be standard practice.
