Pub Solutions South West Ltd had previously pleaded guilty to six breaches of food hygiene regulations and Miss Carr pleaded guilty to two breaches.
Pub Solutions South West Ltd of 33 Riverside Walk, Tamerton Foliot, Devon received a fine of £6,000, plus £3,000 costs and a £15 surcharge. Miss Carr of West Lulworth, Wareham, Dorset received a fine of £300 per offence (totalling £600), £250 costs and a £15 surcharge.
After receiving an anonymous tip-off in February 2011, Environmental Health Officers from Purbeck District Council visited the Sailors Return Public House, East Chaldon, Dorchester, Dorset. At the time, the pub was managed by Pub Solutions South West Ltd who had employed Miss Carr to manage the day-to-day running of the food business.
Nick Parr, Environmental Health Officer for Purbeck District Council, said: “The kitchen and bar area were found to be infested with mice. Both live and dead mice were found, together with vast amounts of droppings and chewed-through food packaging; the mice were thriving in numerous nest sites and dirty conditions. There was little evidence of any pest control measures in place.”
Mr Ian Brierley, Director of Pub Solutions South West Ltd voluntarily closed the public house for pest eradication and a deep clean of the premise.
Councillor Paul Johns, spokesperson for the Built Environment said after sentencing: “The hygiene conditions encountered by the Council’s Environmental Health Officers in February 2011 were appalling, with the food business continuing to be run despite the obvious mouse infestation in evidence.”
Councillor Johns continued: “Officers always try to help food businesses in Purbeck comply with food safety law, but on this occasion conditions found were so poor they were left with no option but to prosecute.”
Nick Parr said: “Since these conditions were discovered, the ownership of the Sailors Return Pub has changed and the new food business operators, Mr and Mrs Beck, have worked hard to improve conditions. Mr and Mrs Beck are in no way associated with the previous problems that the pub suffered.”
