Mrs Niru Ratnam, operator of the Sagar restaurant on The Boulevard, received her fine at Haywards Heath Magistrates’ Court on Wednesday, May 16 2012. She pleaded guilty to eight offences under the Food Safety Act 1990. Three of the charges related to offering unsafe food for sale and the remaining five to lack of training, poor standard of cleaning and a failure to provide a documented food safety system.

Mrs Ratnam was fined £2,500 and ordered to pay £2,500 costs.

Cllr Ken Trussell, Cabinet Member for Environmental Services, said: “The public has a right to expect a high standard of food hygiene when they eat out. When the rules are flouted so flagrantly we will prosecute in the interests of public safety.”

Council officers obtained a Hygiene Emergency Prohibition Order from the Magistrates’ Court to close the restaurant last July (15 July 2011).
