Barry Hankinson of the Royal George in High Street, Solva, pleaded guilty to two charges of failing to comply with food safety laws at Haverfordwest Magistrates Court on the 8th November 2011.
The offences came to light during a visit to the pub in January 2011 by an Environmental Health Officer from the Public Protection division of Pembrokeshire County Council following a complaint.
The officer discovered a rat infestation at the premises and a Hygiene Emergency Prohibition Notice was issued requiring the Royal George to close immediately until the rodent problem was resolved.
Mr Hankinson was fined £1,500 for each of the two offences and ordered to pay the Council’s costs of £1,630.05.
The Authority’s Cabinet Member for Environmental and Regulatory Services, Councillor Ken Rowlands, said: “This case highlights the importance of food business operators ensuring that adequate measures are in place to prevent infestation of pests and that the public is safeguarded.”
